Chewy Plantation Pecan Pie

Since Madame Julia’s is named for a legendary free woman of color (and former slave) whose very freedom was a result of her cooking expertise, these recipes are representative of what she might have cooked for her master and his wealthy friends, either at their town house in New Orleans or plantation up river at Pointe Coupee Parish.

3 eggs
1 cup dark brown sugar
1 cup light Karo corn syrup
1-1/2 cup chopped pecans (big pieces)
1 teaspoon good vanilla (I like Mexican)
1 unbaked 9-inch shell
2 Tablespoons bourbon whiskey

Beat eggs, add sugar, syrup and pecans. Whip in vanilla and bourbon and pour into unbaked pie shell. Bake 90 minutes at 225 degrees and 30 minutes at 300 degrees. Cool before serving.
